Hemp and Veggie Taco Brunch

Today this made me happy. I had a lovely brunch on my balcony. Since I just moved into my apartment, I haven't really had a chance to make it feel like home yet. So, this morning I went out and bought a plant, some fresh herbs from Trader Joe's, a little wooden TV tray, and some container gardening stuff. After I set up my little station, I went to work on my food. I decided to have Veggie and Hemp seed tacos with fruit and brown rice. Mmmm, it was so delicious! I grabbed my homework reading and a light blanket and curled up in my chair. The morning was beautiful and peaceful, great for meditation or reflecting. My very own corner of the world and some good food was all I needed. It really made my day. :)
So, for any of you who are interested I am posting the recipe for the tacos. Hope you enjoy!

The taco filling consisted of:

1/2 cup of sugar snap peas
1/2 cup of spinach
garlic (1 diced or chopped clove or about a tsp minced)
1 tbsp olive oil
1/8 cup water

First, I warmed the olive oil up in a medium sized pan. I then added the garlic and browned that for just about 30 seconds. Since the peas take longer to cook then the spinach, I placed them in the pan alone to start. I sauteed them for about 1 minute or until they appeared to have absorbed some of the olive oil and began to get grill marks. Then, I added the water and let that simmer down to almost nothing. This doesn't take long and it ensures that the peas get just a little bit soft so the consistency matches the cooked spinach. Then add the spinach and finish sauteing them together. Remove from the fire when the spinach is to your liking (I don't like mine to get mushie that's when they loose the nutrients).

After the filling is cooked I warmed two corn tortillas. You can use whatever tortillas you like best. White corn, yellow corn, and Sprouted grain are my favs. Then I sliced Avocado and placed a few slices down on the tortillas. Once that was in place, I divided the filling in half (one half for each taco) and scooped it into the tortillas.

Now the good part... the topping:

2 tbsp shelled Hemp Seed
About a palm full of Cilantro
1/2 small Lime

Again I divided these ingredients in half and split them up between the two tacos. (You can top that with some Salsa Verde for some kick.) So then my tacos were ready and I stuffed my face!

P.S. Don't forget the fruit or add something with tomato. This will help you absorb the iron from the spinach better!

My 1 year Natural Anniversary!

Hello everyone! I just wanted to share that today is my one year Natural Anniversary. A year ago today I went on a 21 day vegan cleanse thanks to Kris Carr and The Crazy Sexy Diet (an amazing book with a lot of information buy it today!). I did lots of juicing with much help from Erin (@ Pulp Jackson) and the gang at Pulp Juice and Smoothie Bar (At the Strip) in Canton, OH for those days I was on the go. Through that cleanse I learned the benefits of being an all natural girl. So I made major changes in my life. I found loads of helpful information and support online and in some great friends (ie Leah Kackley and Hey Fran Hey, UrbanBushBabes). Thanks to all who have assisted me on this journey. It's just the beginning!

@ Venice Beach

Moved to San Diego- Oilpulling Method

So I recently moved to San Diego. I am job hunting, natural hair hunting, vegan hunting, social scene hunting... lol basically starting from scratch. It isn't too bad. I have a great big guy and a great little guy in my corner to spend time with and support me. However, they are not at all into natural hair or vegan lifestyle. My hunnie does like to eat healthy and is concerned about the environment and my son works out with me in the pool and at the gym. I am trying to get into a routine and I have been trying a lot of new techniques and products. I will be posting updates and reviews soon.

Other than that, I love this state. It's beautiful and sunny. It feels welcoming and friendly and people care about health and the planet. The last two are seriously near and dear to my heart so I'm working with a good foundation. I'm signed up to join a few local groups and once I start going to meetups I'm sure I'll find my groove. Until the, I suppose I'll just vent online to anyone out there who is listening.... or reading rather lol.

For now I'll leave you with this:



Today I started something called the Oilpulling Method. It is an Ayurvedic (a Hindi approach to medicine that uses the senses Ayurveda means "the knowledge for long life") technique in which I basically gargle an swish oil (I use sesame oil) in my mouth for 15 to 20 mins (roughly), then spit it out and cleanse my mouth. The idea is that the oil mixes with the enzymes in your saliva and help "pull" toxins out of your mouth. It is believed that this method could help alleviate migraines, sinus troubles, other illness, and also help with oral health. Thanks to "HeyFranHey" I discovered this and am now go to see what results it brings me. I will keep you posted.
